1 lb      dried spaghetti
6-8       cloves garlic, very thinly sliced
1/2 t     crushed red pepper flakes
            freshly grated Grana Padano
            chopped fresh parsley for garnish (optional)

Method:

  1.  Boil salted water and add spaghetti and cook just about a minute before it gets al dente or being done. Drain. Reserve about 1 cup starchy, pasta water for use later.
  2. Saute the garlic in extra virgin olive oil and add the crushed red pepper flakes. Saute it for 3-5 minutes or until lightly golden.
  3. Toss the cooked pasta in the sauce.  Use tongs to transfer the pasta to the saucepan.  
  4. Add about 1/2 cup of the reserved pasta water.  Toss pasta to evenly coat it with the garlic sauce.  If it looks too dry, add a bit of the starchy water.
  5. Taste and season with salt, crushed red pepper flakes, and Grana Padano.
  6. Serve while hot and garnish with parsley if desired.
