1 small yellow onion, chopped (or 1/2 onion)

4 garlic cloves, minced

2 scallions, chopped

2 small tomatoes, diced

1 T flour

1 c. heavy cream

1 c. white wine

1/2 c. Grana Padano, shredded

1 t Italian seasoning

1/2 t salt or more to taste

1/4 t crushed red pepper flakes


Method: 

  1.  Prepare the chicken breasts. Halve them horizontally and towel them dry using a paper towel.
  2. In a bowl, combine flour, salt, black pepper, garlic powder, and Italian seasoning. Stir well. 
  3. Using tongs, coat the chicken breasts in the flour mixture, coating the chicken properly on both sides. Set aside.

Ingredients:

4 boneless skinless chicken breasts 

1/2 c. flour

1 t salt

1/4 t black pepper

1 t garlic powder

2 t Italian Seasoning

2 T olive oil

12 oz Tomato & Spinach Spaghetti #8


For the White Wine Parmesan Sauce:

4 T butter

1 small yellow onion, chopped (or 1/2 onion)

4 garlic cloves, minced

2 scallions, chopped

2 small tomatoes, diced

1 T flour

1 c. heavy cream

1 c. white wine

1/2 c. Grana Padano, shredded

1 t Italian seasoning

1/2 t Kosher Salt

1/4 t crushed red pepper flakes


Method: 

  1.  Prepare the chicken breasts. Halve them horizontally and towel them dry using a paper towel.
  2. In a bowl, combine flour, salt, black pepper, garlic powder, and Italian seasoning. Stir well. 
  3. Using tongs, coat the chicken breasts in the flour mixture, coating the chicken properly on both sides. Set aside.
  4. In a skillet, heat 2 T of olive oil and make sure that you use only medium-high heat. 
  5. Once the oil is hot, place the coated chicken breasts and cook for 4 - 5 minutes each side until golden brown. Remove chicken from pan and set aside.
  6. Now add butter, yellow onion, and minced garlic to the pan. Cook on medium-high until onions and garlic are both translucent (about 2 minutes). 
  7. Add chopped scallions and tomatoes. Add 1 T of flour to the pan and whisk to combine. 
  8. Pour in heavy cream, wine, Italian seasoning, salt, and red pepper flakes. Let it simmer before adding up 1/2 cup of the shredded Parmesan cheese. You may utilize a whisk or wooden spoon in mixing until you have a smooth mixture.
  9. Cook the Tomato and Spinach Spaghetti pasta according to package instructions in salty water until al dente. Drain. 
  10. Once the pasta is al dente and drained, add it to the skillet where you made your sauce. Stir while applying low heat for 2-4 minutes. Taste and season with salt if needed.  
  11. Put the cooked chicken breasts on top of the pasta to warm it up.
  12. Serve chicken on top of pasta or just next to it. Sprinkle with Grana Padano if you want.
